Granola

When the cold winter months have disappeared and I no longer feel the need to eat warm porridge for breakfast, my favourite thing to turn to is some form of granola, or mixed oats, muesli, with a couple of tablespoons of porridge. Last year I began making my own instead of buying as there was always something I didn’t in the ones available to buy, and this seemed  the best option!

– 2tbsp vegetable oil

– 125ml maple syrup

– 2tbsp honey

– 300g rolled oats

– 50g sunflower seeds

– 4tbsp sesame seeds

– 50g pumpkin seeds

– 100g dried berries

– 50g coconut flake/desiccated coconut

Preheat the oven to 150C/Gas Mark 2. Mix together in a large bowl the oil, maple syrup and honey. If you have vanilla extract you could put 1tbsp in now too.

Tip all the ingredients in except the fruit and coconut and mix together. Tip out onto the two baking trays, spreading evenly and bake for around 15 minutes. Take out, add the fruit and coconut, and bake for a further 10 – 15 minutes.

Once the granola has cooled down, store in an airtight container and it will last for up to a month.

I am a huge lover of dried cranberries and add quite a number of these! The perfect breakfast, especially for a non breakfast lover!
